Natural, plant-based emulsifier for cold-stirred emulsions Here, CM stands for "cream" Fluidlecithin CM contains 35 % choline phospholipid, the most precious lecithin, and 15 % other phospholipids. 50 % soy oil helps the fluid lecithin to stay liquid. A cream made with lecithin always has a consistency slightly similar to custard, and tends to separate. This is not a reduction in quality, just a special characteristic in a cream. If you do not like it, but want to use lecithin anyway, you can use lecithin CM as a so-called co-emulsifier. Mix two emulsifiers, like Tegomuls and lecithin or Emulsan and lecithin. Products made this way are significantly more stable. Creams made with lecithin as an emulsifier will always be slightly yellow.
