Emulsifier, also suited for food preparation
Tegomuls 90 S is a self-emulsifying emulsifier for normal to slightly dry skin.
It has strong emulsifying properties, which means that it can bind a large amount of water. It is used for creams and skin care products. Creams made with Tegomuls are always light and are absorbed well.
Concentration: 2-15 %
INCI: Hydrogenated palm glyceride
Additionally, Tegomuls is an excellent raising agent for sponge cake, ice cream and soufflé.
A recipe for a sponge cake with Tegomuls:
Tegomuls water paste:
mix Tegomuls and water in a ratio of 1 to 10 in a heatproof beaker, heat on the stovetop to appr. 70°C. Stir until the emulsifier dissolves and the paste thickens.
Mix 200 g sugar, 60 g starch, 66g of the Tegomuls-water-mix and 5 small eggs. Mix in the food processor for 5 minutes. Pour into a greased baking tin and bake 35 to 45 minutes at 180°C.
This will make a magnificent cake!
