Gelling agent, food grade

Xanthan gum is a sugar-like substance produced in a fermentation process by the microorganism Xanthomonas compestris. After fermentation, the xanthan gum is precipitated with alcohol, afterwards dried and ground. Xanthan gum is a carbohydrate and a food additive also used for thickening/gelling of deserts, custards etc.
It is easily soluble in warm water and builds gel-like structures. These are very stable in the acidic as well as alkaline pH range, in higher concentrations of salt and alcohol, and survive temperature fluctuations. The pH value of the solution is 7.
In cosmetic formulas, it is used as a gel forming components (deodorants, lubricants) and as a stabilizer in emulsions (e.g. in lotions and surfactant formulas)
Concentration: 0,1 - 5 %.
Tip: The gels have a slightly slimy consistency, which can be improved by adding guar gum or alginate.
