Sugar substitute, suitable for diabetics, brilliant for baking!

Isomalt consists of sorbitol, mannitol and glucose obtained from saccharose by fermentation. Isomalt is not a natural substance, but is completely harmless as it consists of the same components as natural sugars.
Isomalt is suitable for diabetics as it is metabolized slowly (1 BE-20g).
Isomalt re-crystallizes after being dissolved. It is therefor most suited for making hard candy, lollipops and brittle. These products will stay solid as Isomalt is not hygroscopic. It is not suited for making jam as it will build sugary crystals in the finished product.
Isomalt is very well suited for making sugar coatings, as it will melt at low temperatures. It will also keep its color.
If you want to make caramel, you have to add a small amount of Oligofruct HT.
Tip: Large amounts of Isomalt (> 15 g per day) may cause flatulence
