The building block of our body cells! Lecithin is mostly obtained from soybeans. Thus, it is purely plant-based. In the broadest sense, lecithin belongs to the fats. The chemical term for lecithin is "phospholipids". Phospholipids are present in all living organisms as they build the basic structure of the cell membrane/wall. Thus, they control which substances can enter or leave the cell, and thus have an important protective function. Humans have high amounts of lecithin in nerve and brain cells, and in heavily stressed muscles like the heart muscle. Lecithin can improve fat metabolism, it reduces fat in the bloodstream and in the liver, and regulates the cholesterol level. These actions are caused by the emulsifying properties of lecithin: it merges water and fat. You can add granulated lecithin e.g. to your muesli or take it as it is.
