For successful sugar-reduced jam and jelly making

If you make jam and jelly without sugar or with sugar substitutes, apple pectin NVM (low methylester) helps: it helps to start the gelling process, and it helps to keep it going.
To ensure that this process is started, calcium is needed. Not all fruit contain enough calcium, so you should add some calcium citrate, in a concentration of 0,2 to 0,3%; so, for 1 kg jam you should add 20 to 30 g calcium citrate.
If you use sorbitol or fructose, use two to three times the amount of calcium citrate.
The concentration of apple pectin NVM should be between 1,2 and 1,4%.
Caloric value: 100 g apple pectin NVM contain appr. 180 kcal and 90 % soluble fiber.
