For successful jam and jelly making

If you make jam and jelly with 50% sugar or sweetener, apple pectin HVM (high methylester) helps: it helps to start the gelling process, and it helps to keep it going.
It is also suited as an addition to ready-made preserving sugar if you process fruit that have a low pectin content, like peaches or apricots.
The pH value should be below 3,5 to ensure an uninterrupted gelling process.
If you use fruit with very little acidity, you can adjust the pH by adding citric or malic acid. To determine the pH, you can use indicator paper (which you can also use to check the pH in all other liquid or gel-like fluids).
The concentration of apple pectin HVM should be between 1,2 and 1,4%.
Caloric value: 100 g apple pectin HVM contain appr. 180 kcal and 90 % soluble fiber.
