Naturally occurring sugar substitute Xylitol is a sugar substitute. It is an odorless, white powder that tastes like sugar. It is made from Xylose, a so-called wood sugar. It is present in many plants ? you can find it in wood, but also in almost every fruit and vegetable, e.g. in cauliflower, plums, strawberries. Xylitol is also present in the human body, as an intermediate product of the metabolism. A healthy adult will produce 5 to 15 grams per day. Xylitol has app. 30% of the sweetening power of sugar, its main advantage: it does not cause caries. On the contrary, it prevents build up of damaging acids in the oral cavity, and is therefor often used in sugar-free chewing gum. In the mouth, Xylitol has a cooling effect on the tongue which is often used in the production of ice cream or Eiskonfekt. Tip: the body needs to get used to Xylitol.
